Herve Villemade - Pivoine Rouge 2021
Located in the Loire Valley's Cheverny appellation, Herve Villemade has been a pioneer in organic and biodynamic winemaking since taking over his family's estate in 1995. Working primarily with Sauvignon Blanc, Chardonnay, Romorantin, Pinot Noir, and Gamay, Villemade creates wines that perfectly express the terroir of the region. His commitment to natural winemaking practices includes hand-harvesting, indigenous yeast fermentation, and minimal intervention in the cellar.
The estate's 27 hectares of vineyards sit on a mix of clay, limestone, and silex soils, contributing to the distinctive mineral character of the wines. Villemade's approach focuses on creating pure, terroir-driven wines that showcase both the variety and the land, making him a respected figure in the natural wine movement.
Organic Côt (the local name for Malbec) grapes were harvested by hand. Fermentation with indigenous yeast in a combination of amphora vessels and stainless steel tanks where the wine also aged. No fining or filtration and just a small amount of sulphur added at bottling.
A really delicate and sophisticated expression of the Cot grape variety. The amphora ageing has provided a beautiful soft texture to the wine. Herbal and peppery aromas alongside a fresh red and black fruit profile. Excellent value for a wine with such finesse.
